Baked Potatoes- recipe from the Joy of Cooking cookbook, annotated for PASC volunteers.

“Important Facts for Potato Bakers”
Preheat oven to 425 degrees (This assumes you're going to cook them right away. I usually wash the potatoes the night before and cook in the morning.)

Wash and scrub baking potatoes (Idaho or Russet). I usually get size 70 (about the size of 1 1/2 fists or slightly smaller than a soda can).

Bake the potatoes for 45 minutes to 1 hour, depending on their size. (If potatoes are purchased at Costco, they tend to be on the larger size. Be sure to bake for at least 1 hour.) When potatoes are 1/2 done, pull out rack, quickly puncture skin once with fork, permitting steam to escape. Return to oven and finish baking. (I stick a fork into them to see if they're done. The fork should go in pretty easily).

Wrap each potato in foil. Bring them to PASC in a box lined with newspaper (for insulation) or a foam ice chest or cooler labeled with your name and phone number (in case you forget to pick it up at the end of the day.)

2 dozen potatoes can fit into my oven for one cycle of baking, but you may want to check the size of your oven. Also, I usually put the potatoes on a pan (large cookie sheet with edges all the way around) rather than directly on the oven rack just because I find it easier to get the potatoes in and out of the oven that way.
